The baker you can trust to delight

By.Aletoso in Brisbane says yes to cakes for everyone

Words: Damien Woolnough

4th July 2018

Wedding cake makers were an unlikely target for 'No' campaigners during Australia' Same Sex Marriage plebiscite in 2017.

It was all a storm in a flour cup for Brisbane baker and chef Camilo Murcia, who just continued to make breathtaking cakes for the loyal clientele of his business By.Aletoso

For Murcia, originally from Colombia, the first cake that he makes for for a same sex couple will be his own.

"My own wedding is fast approaching and of course I'm going to make my own cake," Murcia says. "I would of course love to a part of any same-sex wedding."

We ask Murcia for the recipe in having a cake made with love.

How did you get into cake making?

I never expected to be a cake designer. I started playing with shapes and models as a professional industrial designer, but it was really when I studied to become a chef that I brought my two passions together.

Over the years as a chef I have focused on making cakes that are almost too beautiful to eat but impossible to resist.

After a while of friends and customers telling me that my cakes are innovative, as well as being delicious, I started showcasing my cakes on social media. I was blown away by the response and this convinced me to start my own company in 2017, By.Aletoso Luxury Cakes.

I chose the word aletoso as a part of my business name, because this is what my friends call me. For me, aletoso means someone who likes to be unique, show-off and stand out from the crowd. This is the signature of my company.

What is it that makes wedding cakes so popular?

In Australian culture, cakes are an essential part of a wedding celebration. From my experience with couples, they all want a unique design for their special day. This is why couples are keen to find the perfect cake, no matter the price.

Have most couples put a lot of thought into their cake?

Recently, a couple called me and said they wanted a cake for 90 people and that they just wanted me to blow their mind. The only requirement was that it should have light colours.

Another time, a couple was very specific. They wanted a cake where half showed their love of flowers and bright colours while the other half showed their love of Pokemon.

What is your favourite type of cake?

I love sponge cakes, because they're light, fluffy and you can play with many different types of flavours when you're making them.

But, the cake that makes my job easier is a mud cake, one of the favourite cakes of Aussies. Mud cakes are very firm and the structure of the cake is so easy to handle.

What is your idea of wedding cake hell?

I asked my partner to deliver a cake and he grabbed the cake box from the side and ended up smudging part of the design. I had to rush home from another delivery to touch up the cake. While he is an amazing delivery boy, he doesn't have a creative bone in his body.
